Preheat the oven to 200ºC. Meanwhile, wash and dry the potatoes, add extra virgin olive oil, salt and pepper. Wrap the potatoes in aluminium foil and put them in the oven.
If the potatoes are medium-size, you will need about 45 minutes to roast them and if they are small about 35 minutes. Once this time has passed, check if they are cooked by prodding them with a skewer.
Let them rest for about 10 minutes outside the oven to continue cooking with the residual heat. Meanwhile, cut chives and mix with the cream cheese.
Once the resting time has passed, remove the aluminium foil, cut the potatoes lengthwise and add two tablespoons of cream cheese to the centre of each.

In a pot add water and bring it to a boil. Meanwhile, wash and cut the potatoes into wedges of the same size and, once the water boils, place these wedges in the pot.
Let the potatoes boil for 12 minutes, and preheat the oven to 200ºC. Once the boiling time has passed, remove the water from the pot.
Being careful not to break the potato wedges, add extra virgin olive oil, salt, pepper, sweet paprika, hot paprika, garlic powder, onion powder, or other spices to taste.
Place the seasoned potato wedges on a tray on parchment paper by leaving gaps between them so they don’t stick. Place the tray in the oven for 12 minutes.
Once the time has passed, remove the potatoes from the oven and let them rest for 3 minutes. The result obtained is potatoes with a crispy exterior and tender interior that can be served with homemade guacamole sauce, for example.
